Creme Fraiche

I've heard so much about Creme Fraiche over the years I finally decided to make some and see what the fuss is all about. I made this to go with my Nectarine Crostata (look for posted recipe). It was a wonderful combination. It's not a whipped cream, it's not a sour cream...it's somewhere in between. Use without the added sugar as you would sour cream, and use with sugar as you would whipped cream. Give it a chance! Prep time includes 'sitting' time for mixture. Show more

Yields: 1 cup

Directions

  1. Mix together cream and buttermilk in glass container.
  2. Cover and let stand at room temp for 12 hours without disturbing.
  3. Stir and chill for 6 hours.
  4. Stir again and serve as is, or add the sugar to serve on pies and such.
