  1. Spray saucepan with cooking spray. Sauté onion for 3 minutes.
  2. Add potatoes and 2 cups of chicken broth. Bring to a boil. Reduce heat and simmer until potatoes are tender, about 10 minutes. Remove from heat and let cool slightly.
  3. In a food processor, puree potato mixture until smooth. Pour soup back into saucepan.
  4. Stir in remaining chicken broth, mixed vegetables, bell pepper, thyme and hot pepper flakes. Return to a boil. Cover and simmer until vegetables are tender, about 8 minutes.
  5. Serve garnished with basil.
