Creamy Vegetable Chowder

Ingredients
- cooking spray
- 1⁄2 cup chopped onion
- 2 cups diced potatoes
- 2 1⁄2 cups chicken broth
- 10 ounces frozen mixed vegetables, thawed
- 1⁄2 cup chopped red bell pepper
- 1 teaspoon chopped fresh thyme
- 1⁄8 teaspoon crushed hot pepper flakes
- 1 tablespoon chopped fresh basil
Directions
- Spray saucepan with cooking spray. Sauté onion for 3 minutes.
- Add potatoes and 2 cups of chicken broth. Bring to a boil. Reduce heat and simmer until potatoes are tender, about 10 minutes. Remove from heat and let cool slightly.
- In a food processor, puree potato mixture until smooth. Pour soup back into saucepan.
- Stir in remaining chicken broth, mixed vegetables, bell pepper, thyme and hot pepper flakes. Return to a boil. Cover and simmer until vegetables are tender, about 8 minutes.
- Serve garnished with basil.
