Creamy Sweet Potatoes

Ingredients
- 4 medium sweet potatoes
- olive oil
- 2 ounces cream cheese
- 1⁄2 cup butter, softened
- 1⁄4 cup maple syrup
- 2 teaspoons vanilla
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon black pepper
- 1⁄2 cup walnuts or 1⁄2 cup pecans, toasted and chopped
Directions
- Preheat oven to 400 degrees. Scrub sweet potatoes and rub with olive oil. Pierce each potato several times with fork. Place potatoes on foil lined pan, bake until for tender about 1 hour. Cut the hot potatoes in half lengthwise, scoop the pulp into a mixing bowl, discarding the skin. Using a mixer mix on medium for 1 minute. Add the cream cheese, butter, maple syrup, salt and pepper. Whip until creamy then fold in nuts.
