Creamy Squash Stuffing Casserole

A wonderful way to get kids to eat their veggies!

  1. Preheat oven to 400.
  2. In saucepan, mix squash, onions, carrots with a little water. Cook covered until tender (20 minutes).
  3. Blend soup and sour cream in a bowl.
  4. Add drained squash mixture to soup mixture.
  5. In a separate bowl, mix melted butter, stuffing cubes, and cheese.
  6. Spray a 9 x 9 pan.
  7. Layer 1/2 of stuffing mix on bottom. Top with all of squah mixture, then the rest of the stuffing mix.
  8. Bake uncovered 20 -25 minutes, until bubbly.
