Creamed Spinach Soup with Pine Nuts

  1. Saute onions and garlic in olive oil until translucent.
  2. Add remaining ingredients except for almond milk.
  3. Bring to a boil, and then turn down to a simmer for 20 minutes.
  4. Blend with an immersion blender or regular blender in batches. Return to the pot.
  5. Stir in almond milk and simmer for an additional 5 minutes.
  6. Season to taste. Garnish with pine nuts and homemade croutons.
