Creamy Sausage Tortellini Soup

Serves: 6-8
Ingredients
- 1 -2 lb Italian sausage
- 1 onion
- 3 stalks celery
- 2 large carrots
- 4 minced garlic cloves
- 1⁄4 cup flour
- 6 cups chicken stock
- 10 ounces cheese tortellini
- 10 ounces frozen spinach
- 2 cups milk or 2 cups heavy cream
Directions
- 1. Brown sausage on medium-high heat. Drain and set aside.
- 2. Saute diced vegetables: onions, carrots, celery for 4-5 minutes. Add minced garlic and saute for an additional 1-2 minutes.
- 3. Stir in flour to coat and cook 1 additional minute.
- 4. Slowly add in stock and then get to a simmer.
- 5. Once simmering, reduce heat to medium-low and simmer for 5 minutes.
- 6. Stir in sausage, tortellini, spinach and milk. Simmer 4-5 minutes or until tortellini is cooked.
- 7. Season to taste and serve.
