Creamy Potato Casserole

Ingredients
- 8 medium potatoes, peeled and quartered
- 1⁄2 cup butter or 1⁄2 cup margarine, melted and divided
- 1 medium onion, chopped
- 1 teaspoon salt
- 1 cup sour cream
- 1 (10 1/2ounce) can cream of mushroom soup
- 2 cups shredded cheddar cheese
- 1 (6 ounce) package herb seasoned stuffing mix
Directions
- Place potatoes in a greased 4.5 to 6 quart crockpot. Pour 1/4 cup melted butter over top. Add the onion, salt, sour cream, soup and cheese. mix. Pour stuffing mix over potatoes and drizzle remaining melted butter over all. Cover and cook on low for 6-8 hrs or high 3-4 hours.
