Creamy Polenta With Cheese

Ingredients
- 1 cup yellow cornmeal
- 1 1⁄2 cups milk
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon cayenne pepper
- 6 ounces feta or 6 ounces mild goat cheese
Directions
- In a small bowl, stir together the cornmeal and 1 cup milk until blended and smooth.
- In a medium saucepan, bring 1 ½ cups water and the remaining ½ cup milk, salt and cayenne to a simmer over low heat.
- Stirring constantly, gradually pour in the cornmeal milk mixture.
- Cook over low heat, stirring constantly for 10 minute or until thick and creamy.
- Crumble in the cheese and cook, stirring, for 3-4 minutes or until the cheese is melted.
