Creamy Pesto Chicken Sandwich

Ingredients
- 2 ounces fresh basil
- 2 tablespoons almonds
- 1 garlic clove
- 2 tablespoons olive oil
- 2 tablespoons parmesan cheese
- 1 chicken breast, cooked
- 1⁄4 cup onion
- 1 cup Greek yogurt
- 1 tomatoes, sliced
- oregano
- salt
- pepper
- 4 tablespoons mozzarella cheese, shredded
- 4 sandwich buns, toasted
Directions
- pesto: In a food processor, combine basil, almonds, garlic, olive oil, parmesan cheese, and salt/pepper.
- Mix the pesto with greek yogurt. Dice or shred the chicken and combine with pesto/yogurt mixture, oregano & onion. Spoon onto sandwich rolls and top with tomato and mozzarella. Put under broiler just long enough to melt the cheese -- 3minutes. Enjoy.
