Creamy Mushrooms and Zucchini

Ingredients
- 1 pint heavy cream
- 8 zucchini
- 6 ounces mushrooms
- 1⁄2 cup sweet onion
- 1⁄8 cup olive oil
- 3 tablespoons butter
- 1⁄4 cup bacon, cooked and crumbled
- 1⁄4 teaspoon nutmeg
- 1⁄4 teaspoon smoked salt or 1⁄4 teaspoon salt
- 1⁄4 teaspoon red pepper
Directions
- Slice zucchini, onion and mushrooms. Saute the zucchini, bacon and onion in the oil and butter 3-4 minutes. Add the mushrooms, cream and spices.
- Simmer on low till thick and mushrooms soften- 10/15 minutes or so.
- I use pre cooked Hormel bacon and a blend of sliced mushrooms.
- Great over pasta or rice.
- Add parm. cheese if in the mood.
