Creamy Lemon, Mushroom, Shrimp and Rice

Ingredients
- 4 cups cooked white rice
- 1 tablespoon garlic-flavored olive oil
- 16 ounces white mushrooms, sliced about 6 cups
- 1 (250 g) container chive & onion cream cheese
- 1 lb shrimp, medium size cooked, peeled
- 2 cups baby spinach leaves
- 1⁄4 cup water
- 1 tablespoon lemon juice
- 1⁄2 cup parmesan cheese, shredded
Directions
- Heat oil in a large non-stick skillet over medium heat. Add mushrooms and cook 6 minutes or until mushrooms are golden. Add cream cheese, stirring until melted. Add shrimp, spinach and water; cook until heated; about 2 minutes. Fold in cooked rice, lemon juice, and more water if needed. Top with parmesan cheese and serve.
