Creamy Ginger Miso Dressing

Yields: 3/4 cup
Ingredients
- 4 ounces silken tofu
- 2 tablespoons light miso
- 1 tablespoon rice vinegar
- 1 tablespoon chopped scallion
- 2 teaspoons grated gingerroot
- 1⁄3 cup orange juice
- 1 teaspoon soy sauce
- 1 teaspoon brown sugar
- 1 teaspoon dark sesame oil
Directions
- Combine all of the ingredients in a blender or food processor and puree until smooth.
- Coverd and refrigerated, this dressing will keep for about a week.
