Creamy German Cucumber Salad (Gurkensalat)

Serves: 4-6
Ingredients
- 2 large English seedless cucumbers (or 4 regular cucumbers)
- 4 tablespoons apple cider vinegar
- 3 tablespoons sugar
- 1 1⁄2 teaspoons kosher salt
- 1⁄2 teaspoon pepper
- 6 tablespoons sour cream
- 2 -4 tablespoons minced fresh parsley
Directions
- Peel cucumbers and cut into very thin slices with mandoline.
- Mix together vinegar, sugar, salt and pepper and pour over cucumbers.
- Marinate at least 20 minutes but NO MORE than an hour. Drain off liquid.
- Toss cucumbers with sour cream, top with fresh parsley, and serve.
