Creamy German Cucumber Salad (Gurkensalat)

This creamy German cucumber salad, or Gurkensalat, is the perfect companion side dish for bratwurst or burgers. Tangy, sweet and fresh, it's a deliciously easy summer salad.

Ingredients

• 2  large English seedless cucumbers (or 4 regular cucumbers)
• 4  tablespoons apple cider vinegar
• 3  tablespoons sugar
• 1 1⁄2 teaspoons kosher salt
• 1⁄2 teaspoon pepper
• 6  tablespoons sour cream
• 2 -4  tablespoons  minced fresh parsley

Directions

1. Peel cucumbers and cut into very thin slices with mandoline.
2. Mix together vinegar, sugar, salt and pepper and pour over cucumbers.
3. Marinate at least 20 minutes but NO MORE than an hour. Drain off liquid.
4. Toss cucumbers with sour cream, top with fresh parsley, and serve.
