Creamy Garlic Soup

A great flavored soup for the fall/winter.

  1. Heat oil in a 6-qt. saucepan; add garlic and shallots and cook until soft, 10 minutes.
  2. Add cream and stock; bring to a boil.
  3. Reduce heat to a simmer about 1 hour.
  4. Add jalapeno and cheese.
  5. Simmer for approximately 1 more hour - until reduced by about half.
  6. Purée in a blender (or use immersion blender) and strain.
  7. Season with salt and pepper.
  8. Add a few croutons upon serving.
