Creamy Country Chicken

A delicate sauce over chicken and mushrooms. A great dish for a dinner party.

  1. In lg pot, saute onion, carrot, and celery in butter until tender, remove and set aside.
  2. In same pot, brown chicken on both sides.
  3. Remove chicken and keep warm.
  4. To pot, add wine, simmer until reduced by half.
  5. Add broth and seasonings.
  6. Return chicken and sauted veggies to pot.
  7. Simmer for 5-6 minutes, until juices run clear.
  8. Remove chicken and place on serving platter.
  9. Mix flour and milk; add to pot, bring to a boil.
  10. Cook and stir for 2 minutes.
  11. In skillet, saute mushrooms in 1 T butter until browned.
  12. Spoon mushrooms over chicken.
  13. Spoon sauce over chicken and mushrooms.
