Creamy cottage cheese frittata with ham & veg

Ingredients

  • 1  teaspoon butter, plus extra for greasing
  • 1  onion, sliced
  • 100  g  sliced ham, torn
  • 50  g  frozen peas
  • 75  g  frozen broccoli florets
  • 4  large eggs
  • 300  g cottage cheese
  • 50  g  mature british cheese, grated

Directions

  1. Preheat the oven to 180c/160c fan/gas 4. Grease a round ovenproof dish or pan with a small amount of butter.
  2. In a large frying pan, cook the onion in the butter until softened but not browned. Add the ham, peas and broccoli, cooking until everything is heated through.
  3. In a large jug, beat the eggs with the cottage cheese. Season with pepper.
  4. Tip the ham mixture into the ovenproof dish, then pour over the egg mixture. Sprinkle over the cheese and bake for 20-25 mins or until the middle has set.
  5. Leave to cool for 10 mins then slice into 6 wedges. Serve warm or cold.
