Ingredients
- 2 (8 ounce) packages Jiffy corn muffin mix
- 2 eggs
- 1 (12 ounce) can cream-style corn
- 1⁄4 cup vegetable oil
- 1⁄2 teaspoon lemon juice
- 1⁄2 teaspoon ground nutmeg
- 3⁄4 cup shredded cheddar cheese
Directions
- Preheat oven to 375°.
- Grease one large muffin pan well, or use paper liners.
- Mix all ingredients together, blending well.
- Pour batter into prepared muffin pan, filling about 1/2 full.
- Bake for 22-28 minutes.
- Let cool before removing from pan.
