Creamy Chicken Casserole

French onion dip lends a tangy accent to this cheesy bake.

Ingredients

  • 23 cup  uncooked  instant rice
  • 14 cup onion, chopped
  • 2  teaspoons butter
  • 12 cup cottage cheese, 4%
  • 13 cup  French onion dip
  • 3  tablespoons sour cream
  • 14 teaspoon salt
  • 1  dash pepper
  • 12 cup  cooked chicken breast, cubed
  • 12 cup  shredded cheddar cheese

Directions

  1. Cook rice according to package directions.
  2. In a small skillet, saute onion in butter until tender; set aside.
  3. In a small bowl, combine cottage cheese, onion dip, sour cream, salt and pepper. Stir in rice & onion.
  4. Spread half of the rice mixture into a 3 cup baking dish coated cooking spray. Layer with chicken, 1/4 c cheddar cheese. Top with remaining rice mixture. Sprinkle with remaining cheese.
  5. Bake uncovered at 360 for 25-30 minutes or until bubbly.
