Creamy Cherry Tomato Salad

Ingredients
- 2 avocados, divided
- 1⁄4 cup fresh lemon juice
- 2 tablespoons olive oil
- 1⁄4 cup water
- 1 tablespoon dried basil
- 1⁄2 teaspoon sea salt
- 2 cups halved cherry tomatoes
Directions
- In food processor, combine 1 avocado, lemon juice, olive oil, water, basil and salt. Process until smooth.
- Cut the remaining avocado in 1 inch cubes and place in bowl. Add tomatoes and avocado puree.
- Toss well to coat.
