Creamy Celery Soup for a Blustery Cold Day........

Yields: 4 cups
Ingredients
- 1 tablespoon olive oil
- 1 onion
- 5 pieces celery
- 3 potatoes
- 4 cups chicken broth
- 1 teaspoon thyme
- 1 teaspoon salt
- 1⁄2 teaspoon pepper
- 1 cup grated cheddar cheese
Directions
- Heat oil in saucepan and add diced onions and cook for a few minutes. Add 5 ribs of sliced celery and cook 5 minutes. Add peeled and chopped potatoes, chicken broth, thyme, salt and pepper. Bring to a boil. Reduce heat and cover and cook for 30 minute Puree soup in blender. Taste and season with additional salt and pepper as required. Sprinke with grated cheddar cheese( we leave this part out and it's still very tasty soup!).
