Creamy Carrot Soup

Ingredients
- 4 cups chicken broth
- 4 cups sliced carrots
- 1⁄2 cup frozen orange juice concentrate
- 1 teaspoon chopped ginger
- 1⁄2 teaspoon dried tarragon
- 1⁄2 teaspoon dried thyme
- 1 1⁄2 cups milk, divided
- 1 tablespoon cornstarch
- salt and pepper
- sour cream (to garnish)
Directions
- Combine broth, carrots, orange juice concentrate, ginger and herbs in slow cooker. Cover and cook on low for 4-6 hours, adding 1 cup milk during last 30 minutes.
- Turn slow cooker to high and cook 10 minutes, stirring in combined cornstarch and milk, stirring 2-3 minutes.
- Process soup in food processor or blender until smooth. Garnish with dollop of sour cream.
