Creamed Spinach

  1. Cook pancetta; remove when crisp.
  2. Add onion then garlic; cook until clear; remove.
  3. Add spinach; cover and cook down on low.
  4. Add flour to milk; pour over spinach.
  5. Add the onions, bacon, and garlic; cook until thick.
  6. Top with Fontina cheese; cover until cheese melts.
