Creamed Chicken on Cornbread

Ingredients
Cornbread
- 1 cup yellow cornmeal
- 1 cup flour
- 4 teaspoons baking powder
- 1⁄2 teaspoon salt
- 1 egg
- 1 cup milk
- 1⁄4 cup shortening or 1⁄4 cup butter, melted
Creamed Chicken
- 2 teaspoons butter
- 2 1⁄2 tablespoons flour
- 1⁄4 teaspoon nutmeg
- 1 teaspoon salt
- 1⁄2 teaspoon pepper
- 2 cups chicken broth
- 1 cup milk
- 3 cups cooked chicken, cubed
Directions
- Instructions for cornbread: Preheat oven to 425F and grease an 8" square pan.
- Mix cornmeal ingredients together until smooth.
- Turn into prepared pan.
- Bake 20 to 25 minutes, or until done.
- For the chicken, melt butter in saucepan; combine with flour, nutmeg, salt & pepper.
- Stir in broth; add milk & cook until thick.
- Add chicken.
- Serve over squares of corn bread.
