Cream Puffs

  1. Puffs: Heat water and butter to a rolling boil. Stir in flour; stir over low heat for about 1 minute, until it forms a ball. Remove from stove. Beat in all eggs at once by hand and beat until smooth. Drop by scant 1/4 cup 3 inches apart on ungreased cookie sheet. Bake at 400 for 35 minutes until puffed and brown. Remove from oven. Cut in half and peel out inside (uncooked dough) and make room for filling.
  2. Filling: Beat the milk, cream cheese, and vanilla for 1 minute.
  3. Icing: Melt chocolate and butter in pot on stove. Remove from heat. Stir in confectioners sugar and hot water. Beat until smooth. Add more water if needed.
