Cream of Mushroom Soup, Shaw's

Ingredients
- 10 lbs mushrooms, sliced
- 2 lbs celery, sliced
- 2 lbs onions, chopped
- 1 lb butter
- 4 tablespoons garlic, minced
- 4 tablespoons hot sauce
- 3 cups white wine
- 1 1⁄2 cups chicken base
- 1⁄2 cup thyme
- 4 bay leaves
- 1 gallon water
- 1 gallon cream
- 2 cups cornstarch
Directions
- Saute mushrooms with butter; add celery, onion, wine; simmer 15 minutes. Add chicken stock & water. Add cream. Bring to low boil. Add cornstarch dissolved in water to thicken.
