Cream of Fiddlehead Soup

Ingredients
- 1⁄4 cup green onion, choped
- 1⁄4 cup butter
- 3 cups chicken broth
- 1 1⁄2 cups cubed potatoes
- 4 cups fiddleheads
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon white pepper
- 1 3⁄4 cups whole milk
Directions
- Saute onions in butter 5 minutes. Stir in broth, potatoes, fiddleheads and seasoning.
- Cover and simmer until potatoes are cooked.
- Purée in blender.
- Stir in milk. Serve hot.
