Cream of Cucumber Soup

Ingredients
- 4 romaine leaves, chopped
- 1 cucumber (peeled, seeded, chopped)
- 1⁄2 cup water
- 1⁄2 cup lemon juice
- 1⁄2 teaspoon garlic (crushed)
- 1⁄4 teaspoon salt
- 1⁄2 avocado
- 1 tablespoon olive oil
- 1 tablespoon fresh dill (1 tsp. if dried) or 1 tablespoon mint (1 tsp. if dried) or 1 tablespoon cilantro (1 tsp. if dried)
Directions
- Add everything through salt to blender or food processor until smooth. Add avocado and oil until smooth. Add herbs. If smooth is too soupy, don't blend so much. If avocado or oil or juice is too many calories, don't add so much. If you need more protein, add your powder to THIS instead of to water.
