  1. Melt butter in 3-quart saucepan on medium heat.
  2. Add onion; cook and stir 5 minutes or until softened.
  3. Add flour, Old Bay and parsley; whisk until well blended.
  4. Whisking constantly, gradually add milk. Bring just to boil.
  5. Stir in crabmeat.
  6. Reduce heat to low; simmer 20 minutes, stirring occasionally.
  7. Stir in sherry, if desired. Heat 1 to 2 minutes.
  8. Sprinkle with additional Old Bay, if desired.
