Cream of Chicken "Stew"

Creamy chicken pieces in a skillet, with peas. Very easy!

Serves: 3-4

Ingredients

  • 4 -5  chicken breasts
  • 3  tablespoons poultry seasoning (Emeril's is good)
  • 1  cup  chopped red and  white onion
  • 3  tablespoons  coconut oil and  sunflower oil (can use one or the other)
  •  one third of an 8 oz package cream cheese
  • 4  ounces sour cream
  • 1  garlic clove, minced
  • 12 teaspoon black pepper
  • 12  of 16 oz bag frozen green  peas and carrots
  • 1 (16 ounce) can  organic corn, drained

Directions

  1. Brown the chicken in the oil, cut into bite size pieces. Do not overcook.
  2. Add remaining ingredients and simmer, making sure the cream cheese gets incorporated. (This software would not let me designate "Chicken Rub" as an ingredient but that is the name of Emeril's "poultry seasoning" I used.) Serve separately or over rice, quinoa, etc.
