Cream-Dressed Cucumbers

Ingredients
- 2 cucumbers (about 2 cups)
- 1⁄2 cup sour cream
- 1 teaspoon white wine vinegar or 1 teaspoon rice vinegar
- 1 teaspoon sugar
- 1 teaspoon dried chives
- 1 teaspoon parsley flakes
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon dried dill weed
- 1⁄8 teaspoon fresh ground pepper
Directions
- Using the tines of a fork, score the cucumber peel from end to end all the way around it. Now peel the cucumbers and slice them thinly.
- Combine the sour cream and remaining ingredients.
- Stir the cucumbers into the dressing. Refrigerate if not eating immediately.
