Cream Cheese Frosting - Lower Fat but You'd Never Know!

This is from the 2003 Cooking Light recipe book. Usually cream cheese frosting is made with butter, but you will not even know the butter's missing. This is a great frosting! (Makes enough for a 9x13" cake.) Show more

  1. Place room temperature or softened cream cheese and vanilla in a large bowl.
  2. Beat with a mixer at medium speed until fluffy.
  3. Add powdered sugar, beat at low speed until smooth.
  4. This makes enough for a 9x13" cake -- for an 8" or 9" cake, doubling the recipe works well.
