  1. melt butter with oil in a dutch oven.
  2. stir in flour and cook stirring constantly 5 minutes or until caramel colored.
  3. add onion and next 6 ingriedients and cook 5 more minutes.
  4. add chicken broth, parsely and chives.
  5. cook 5 minutes.
  6. stir in crawfish and cook 5 more minutes.
  7. serve with hot cooked rice.
