Cranberry White Chocolate Treats

Ingredients
- 1⁄4 cup unsalted butter
- 1 (10 1/2ounce) bag miniature marshmallows
- 4 ounces white chocolate, chopped
- 1⁄4 cup seedless red raspberry jam
- 1 1⁄2 teaspoons raspberry extract or 1 1⁄2 teaspoons vanilla extract
- 1⁄4 teaspoon red food coloring
- 7 cups toasted rice cereal
- 1 cup dried cranberries
Directions
- Line a 13x9 inch baking dish with non-stick aluminum foil which extends the 2 inches beyond the edges.
- In a saucepan, melt the butter over medium low heat; stir in marshmallows, with a rubber spatula, and continue stirring until almost melted.
- Stir in chocolate, jam, extract, and food coloring until blended and smooth; remove from heat.
- Stir in cereal and cranberries and press mixture into the prepared baking dish.
- Let cool completely, peel off foil; cut into 24 squares.
