Cranberry Stuffed Acorn Squash

Ingredients
- 6 acorn squash
- 1⁄4 cup water
- 1 lb fresh cranberries
- 2 granny smith apples
- 1 cup sugar
- 2 tablespoons lemon juice
- 3⁄4 cup fresh squeezed orange juice
- 1 tablespoon orange zest
- 1 teaspoon lemon zest
- 1⁄2 cup chopped pecans
Directions
- Preheat oven to 375.
- Place squash cut side down in baking pan with 1/4c water in the pan. Bake for 45min until just tender.
- Combine stuffing ingredients and distribute evenly among squash halves.
- Return to oven and bake an additional 15min.
