Cranberry Salsa

Serves: 4-6
Ingredients
- 3 cups fresh cranberries
- 3⁄4 cup sugar
- 2 -3 large green onions, chopped (both white and green parts)
- 1⁄2 cup fresh parsley, chopped
- 1 jalapeno, seeded and finely chopped (medium to large sized pepper)
Directions
- Put cranberries and sugar a little at a time into a blender and pulse until coarsely chopped. Scrape into a bowl and repeat until all berries/sugar have been processed.
- Stir in remaining ingredients. Mix well. Cover and refrigerate for several hours or overnight.
