Cranberry-Orange Bread

Ingredients
- 3 tablespoons butter, softened
- 1 cup sugar
- 1 egg, beaten
- 3⁄4 cup orange juice
- 3 tablespoons orange rind, grated
- 2 cups all-purpose flour
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 1⁄2 cups fresh cranberries, chopped
- 1⁄2 cup nuts, chopped
Directions
- Cream together butter and sugar in a medium bowl.
- Blend in egg and orange juice. Beat the mixture thoroughly.
- In a separate bowl, combine flour, salt, soda, and baking powder.
- Add flour mixture to liquid mixture, stirring to moisten. Do not beat.
- Fold in cranberries and nuts.
- Pour batter into a greased 9 x 5-inch loaf pan.
- Bake in a preheated oven at 350 degrees F for 50-60 minutes, or until a toothpick comes out clean when inserted in the center.
