Cranberry Coleslaw

I got this recipe from Whole Foods. I wish I had a great store like that where I live.

  1. In a small bowl, whisk together mayonnaise, lemon juice, 2 tablespoons water, sugar and salt.
  2. Combine shredded cabbage, carrot, scallions, cranberries and optional nuts in a large bowl. Pour dressing over cabbage mixture and toss well to coat.
  3. Allow coleslaw to sit at least 15 minutes before serving, tossing occasionally. However refrigerating it for about an hour makes it even better.
