Cranberry-citrus Glazed Pork

  1. In a small bowl, combine salt, pepper, and 1/4 teaspoon sage; rub over all sides of pork roast.
  2. Place roast on a rack in a shallow roasting pan. Roast, uncovered, in a 325º oven for 1 hour.
  3. For sauce, in a saucepan, combine cranberry sauce, orange peel, orange juice, and 1/4 teaspoon sage.
  4. Bring to boiling; reduce heat. Simmer, uncovered, about 10 minutes or until mixture has thickened slightly.
  5. Spoon about 1/4 cup sauce over pork.
  6. Roast meat, uncovered, 30 to 45 minutes more or until meat thermometer inserted in center of roast registers 155º.
  7. Remove from oven. Cover loosely with foil; let stand 15 minutes. The temperature of the meat will rise 5º during standing. Serve remaining sauce with meat.
