Cranberry-citrus Glazed Pork

Ingredients
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- 1⁄4 teaspoon sage
- boneless pork loin roast (single loin)
- 1 (16 ounce) can whole berry cranberry sauce or 1 (16 ounce) can jellied cranberry sauce
- 1⁄2 teaspoon finely shredded orange rind
- 1⁄3 cup orange juice
- 1⁄4 teaspoon sage
Directions
- In a small bowl, combine salt, pepper, and 1/4 teaspoon sage; rub over all sides of pork roast.
- Place roast on a rack in a shallow roasting pan. Roast, uncovered, in a 325º oven for 1 hour.
- For sauce, in a saucepan, combine cranberry sauce, orange peel, orange juice, and 1/4 teaspoon sage.
- Bring to boiling; reduce heat. Simmer, uncovered, about 10 minutes or until mixture has thickened slightly.
- Spoon about 1/4 cup sauce over pork.
- Roast meat, uncovered, 30 to 45 minutes more or until meat thermometer inserted in center of roast registers 155º.
- Remove from oven. Cover loosely with foil; let stand 15 minutes. The temperature of the meat will rise 5º during standing. Serve remaining sauce with meat.
