Cranberry Chicken Salad

Ingredients
- 1 boneless chicken breast, uncooked
- 2 stalks celery, diced
- 2 tablespoons light mayonnaise
- 1⁄4 cup dried cranberries
- 1⁄4 teaspoon kosher salt
- 1 teaspoon chili powder
- 1 3⁄4 teaspoons sugar
Directions
- Mix salt, chili powder and sugar. Sprinkle on both sides of the chicken.
- Bake the chicken at 350F for 20 – 25 minutes, until cooked through.
- Allow the chicken to cool and cut it into small cubes.
- Combine the chicken with the celery, mayo, and cranberries and mix well.
- Allow salad to chill in the refrigerator for several hours before serving.
