Cranberry Brie Salad

Ingredients
- 1⁄2 cup dried cranberries
- 1⁄4 cup port wine
- 4 ounces brie cheese, chopped
- 1 head butter lettuce (cut or torn, about 1 1/4 cups)
- 2⁄3 cup seasoned croutons
CRANBERRY DRESSING
- 2 tablespoons olive oil
- 2 tablespoons cranberry juice cocktail
- 1 tablespoon basil pesto
- 1 tablespoon red wine vinegar
Directions
- Into a small bowl, measure cranberries and port. Let stand for 1 hour, stirring occasionally. Drain. Discard port.
- In a large bowl, place cranberries, cheese, lettuce and croutons. Toss.
- CRANBERRY DRESSING: In a jar with a tight-fitting lid, combine oil, juice, pesto and vinegar. Shake well. Makes 1/3 cup dressing.
- Drizzle dressing over lettuce mixture. Toss.
