Cranberry Bread

Another Quick bread that my mom has made since I was a little girl. I make this every fall buying extra bags of cranberries which I prepare, and freeze so that I can make this bread throughout the year. Show more

Yields: 1 9x5x3-inch loaf

Ingredients

  • 2  cups flour
  • 1  cup sugar
  • 1 12 teaspoons baking soda
  • 12 teaspoon salt
  • 1  cup cranberries, cut in half or quarters
  • 12 cup  nuts, chopped
  • 1  tablespoon  orange rind, grated
  • 34 cup  orange juice
  • 3  tablespoons butter, melted
  • 1  egg, well beaten

Directions

  1. Preheat oven to 350.
  2. Generously grease and lightly flour a 9x5x3-inch loaf pan.
  3. Prepare cranberries, nuts, and orange peel; set aside.
  4. In a large mixing bowl, combine flour, sugar, baking soda, and salt.
  5. Fold in cranberries and nuts; mix well till everything is coated with the flour mixture.
  6. Stir in orange juice, butter, egg, and orange peel; mix well.
  7. Spoon into prepared pan.
  8. Bake 60 minutes or until toothpick inserted in center comes out clean.
  9. Cool on rack 15 minutes.
  10. Remove from pan, cool completely.
