Cranberries and Cream Jubilee

Ingredients
- 1 cup cranberries
- 2⁄3 cup orange marmalade
- 1⁄3 cup sugar
- 1 teaspoon cinnamon
- 1⁄4 cup orange juice
- 2 pints vanilla or 2 pints chocolate ice cream
- 1 small wafer cookies
Directions
- use fresh or frozen cranberries.
- in a large saucepan, combine cranberries, marmalade, sugar, cinnamon, and orange juice, bring mixture to a boil, reduce heat to low simmer, uncovered 8-10 minutes or until cranberries burst and mixture is syrupy.
- place 2 scoops ( 1/3 c each) ice cream into each dessert glass or bowl, spoon warm cranberry mixture over ice cream.
- garnish with small cookies and fresh mint leaves, if desired.
