Crab Stuffed Poblano Peppers

Yields: 8 pepper halves
Ingredients
- 1 lb lump crabmeat
- 1⁄2 cup fat free sour cream
- 1⁄4 cup seasoned bread crumbs
- 2 tablespoons minced roasted red peppers
- 4 poblano peppers, halved
- 8 teaspoons grated parmesan cheese
Directions
- Coat baking pan with cookings spray.
- combine crab, sour cream, bread crumbs, and red peppers.
- spoon into peppers.
- top with parmesan.
- bake for 375 foil covered pan for 20 minute.
- uncover and bake for additional 15 minute.
