Crab Stuffed Mini Puffs

  1. In a heavy saucepan over medium-high heat, bring water, butter and salt to a boil Add flour all at once, stir until a smooth ball forms.
  2. Remove from heat let stand 5 minutes.
  3. Add eggs one at a time, beating well after each addition.
  4. Beat until smooth and shiny.
  5. Drop by tablespoonfuls 3 inchs apart on greased baking sheets.
  6. Bake at 400 degrees for 25-30 minutes or until golden brown.
  7. Remove to wire racks.
  8. Immediately split puffs open, remove and discard soft dough from inside.
  9. For Filling, combine the mayonnaise, sour cream onion, salt, dill, lemon juice and pepper in a bowl.
  10. Fold in the crab.
  11. Fill bottom halves of puffs, replace tops.
  12. Serve immediately.
