Crab Stuffed Chicken Breast

Ingredients
- 4 boneless chicken breasts
- 6 ounces lump crabmeat
- 2 tablespoons parsley
- 5 ounces cream cheese, softened
- 1⁄2 cup mozzarella cheese
- 1 cup flour
- 1⁄2 cup onion, minced
- 1⁄2 cup olive oil
Directions
- In a medium bowl, mix cream cheese, parsley, mozzarella cheese, onion. Mix in crab meat. Place in fridge for 45 minutes to an hour.
- Heat Olive oil in skillet.
- Cut a pocket into chicken breasts. Stuff pocket with crab mixture. Rub chicken with flour. Brown chicken for 3-5 minutes on each side.
- Place chicken on baking sheet and place in 350 degree oven for 30-45 minutes. Sprinkle with mozzarella and broil for 5-10 Minutes.
