Crab, Mango, and Ginger Salad

Ingredients
- 1 lb lump crabmeat
- 1 English cucumber, peeled, seeded, and thinly sliced
- 1 large ripe mango, peeled and diced
- 1⁄4 cup chopped of fresh mint
- 1 lime, juice and finely chopped zest thereof
- 3 tablespoons extra virgin olive oil
- 1 tablespoon fresh ginger, grated
- 1 red chili, stemmed, seeded, and finely chopped
- sea salt
- fresh ground black pepper
- arugula or frisee
Directions
- In large bowl, combine crabmeat, cucumber, mango, and fresh mint.
- In small bowl, whisk together lime juice, zest, olive oil, ginger, and red chili. Add to crabmeat mixture and season to taste with salt and pepper.
- Put salad greens on plates and top with crab mixture.
