Crab Casserole

Yields: 1 9x13 pan
Ingredients
- 3⁄4 cup butter
- 1 cup celery, chopped
- 1⁄4 cup onion, chopped
- 1 cup bell pepper, chopped
- 1 1⁄4 cups flour
- 1 teaspoon salt
- 2 cups milk
- 2 cups cooked rice, cold
- 12 ounces crabmeat, I use imitation
- 2 cups swiss cheese, shredded
- 1 (8 ounce) package sliced mushrooms
Topping
- 1 cup breadcrumbs
- 1⁄4 cup butter, melted
Directions
- In LARGE bowl combine rice, crab meat, swiss cheese and mushrooms. Set aside.
- In large skillet melt butter. Add chopped all chopped veggies. Saute until tender.
- Add flour and salt. Remove from heat.
- Gradually add milk. Return to medium heat. Stir constantly until it starts to thicken. Immediatly remove from heat.
- Pour into bowl with rice mixture. Mix well.
- Put into 9x13 pan sprayed with nonstick cooking spray.
- To make topping mix butter and breadcrumbs together and spread over casserole.
- Bake at 350 until bubbly. About 40 minutes.
