Crab Casserole

My brother gave me this recipe years ago. He got it from someone he worked with in highschool. It's been in our family ever since. We love it. Hope you enjoy it as much. Show more

Yields: 1 9x13 pan

Ingredients

  • 34 cup butter
  • 1  cup celery, chopped
  • 14 cup onion, chopped
  • 1  cup bell pepper, chopped
  • 1 14 cups flour
  • 1  teaspoon salt
  • 2  cups milk
  • 2  cups cooked rice, cold
  • 12  ounces  crabmeat, I use imitation
  • 2  cups swiss cheese, shredded
  • 1 (8 ounce) package  sliced mushrooms
  • Topping

  • 1  cup  breadcrumbs
  • 14 cup butter, melted

Directions

  1. In LARGE bowl combine rice, crab meat, swiss cheese and mushrooms. Set aside.
  2. In large skillet melt butter. Add chopped all chopped veggies. Saute until tender.
  3. Add flour and salt. Remove from heat.
  4. Gradually add milk. Return to medium heat. Stir constantly until it starts to thicken. Immediatly remove from heat.
  5. Pour into bowl with rice mixture. Mix well.
  6. Put into 9x13 pan sprayed with nonstick cooking spray.
  7. To make topping mix butter and breadcrumbs together and spread over casserole.
  8. Bake at 350 until bubbly. About 40 minutes.
