Cowboy Stew

This is a twist on the original recipe and gives the stew quite a zingy taste. My kids love it.

  1. Chop carrots.
  2. Peel and chop onion.
  3. Peel and dice potatoes.
  4. Chop mushrooms.
  5. Add all vegetables to a large stewing pot and cover with water. Adjust amount to how thick you would like the stew to be. I fill the pot so that it just covers all of the vegetables.
  6. Fry the minced beef slowly on a low heat until all of the meat has browned.
  7. Add the meat to the vegetables.
  8. Fry the sausages on a low heat until cooked all the way through.
  9. Chop the sausages into bitesized chunks.
  10. Add the sausages to the pot.
  11. Add the baked beans to the pot.
  12. Bring to a boil then reduce heat and simmer for 1.5 hours.
  13. Add gravy granules to the mixture gradually until you have reached the desired thickness. If your stew is too moist drain off some of the water and add more gravy. If it's too thick add more water.
  14. Serve hot with dumplings or savoury pancakes.
  15. Can be frozen immediately after cooling.
  16. Enjoy!
