Ingredients
- 2 ounces dried chorizo sausage
- 1 -2 tablespoon olive oil (I covered my pan, the amount wasn't listed in the ingredients)
- 1⁄2 onion, diced
- 1⁄2 jalapeno, diced
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
- 1 teaspoon garlic powder or 1 teaspoon minced garlic
- 1 tomatoes, chopped
- 3⁄4 cup water
- 15 ounces pinto beans
- salt, to taste
- pepper, to taste
- hot sauce, to taste
Directions
- Brown chorizo in olive oil. Add the onion and cook 4 minutes.
- Stir in diced jalapeno, oregano, chili powder, and garlic.
- Add a chopped tomato and cook 1 minute.
- Add the pinto beans (undrained) and 3/4 cup water and cook 15 minutes. Add salt, pepper, and hot sauce.
