Couscous With Sweet Corn

Ingredients
- 1 1⁄2 cups chicken stock
- 1 cup couscous
- 1 1⁄2 cups corn
- 1 cup tomatoes, chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1⁄4 teaspoon ground cinnamon
- 2 tablespoons chives, snipped
- 1 tablespoon lemon juice
Directions
- In a saucepan, bring the stock to a boil. Add the couscous. Cover the pan and remove from heat.
- Let stand about 6 minutes or until all of the liquid has been absorbed. Fluff with a fork.
- In a large nonstick frying pan over medium heat, combine the corn, tomatoes, garlic, chili powder and cinnamon.
- Cook until the liquid from the tomatoes evaporates, about 5 minutes.
- Stir in the chives and lemon juice. Add the couscous and stir to combine.
