  1. In a saucepan, bring the stock to a boil. Add the couscous. Cover the pan and remove from heat.
  2. Let stand about 6 minutes or until all of the liquid has been absorbed. Fluff with a fork.
  3. In a large nonstick frying pan over medium heat, combine the corn, tomatoes, garlic, chili powder and cinnamon.
  4. Cook until the liquid from the tomatoes evaporates, about 5 minutes.
  5. Stir in the chives and lemon juice. Add the couscous and stir to combine.
